As I have been exploring my relationship to my food again, I have been flirting somewhat with vegetarianism.

Vegetarianism still makes a lot of people wonder what it is that you eat, even though the vast majority of all dishes in the world could be considered ‘vegetarian’.

With that in mind, here are thirteen of my favorite ‘vegetarian’ meals and foods. What are yours?

  1. Vegetable Soup: What could be better on a winter day than hot vegetable soup and warm crusty bread?
  2. Bean Burritos: Mexican food is full of amazing vegetarian dishes…
  3. Falafel: The Middle East’s (and my) favorite fast food.
  4. Gaeng Ped Pak (vegetable curry): a traditional Thai red curry made with coconut milk
  5. Black-eyed peas & Cornbread: Southern goodness!
  6. Minestrone Soup: Hearty Italian vegetable soup with rice or pasta - delicious!
  7. Pissaladière: Pissaladière is an onion pizza or onion tart from Provence.
  8. Ratatouille: The perfect recipe to enjoy fresh summer vegetables and herbs; it can be served half a dozen different ways.
  9. Miso Soup: with shiitake dashi, of course.
  10. Spanakopita: A classic vegetarian recipe from Greece: rich and delicious spinach-cheese pie.
  11. Couscous: Couscous is a grain made of semolina commonly eaten in North Africa with vegetables and spices.
  12. Fettucine Alfredo: any pasta tossed with cheese and butter or cream, really.
  13. Pad Thai: skip the Thai fish sauce…
