Cottage Cheese Cornbread

This is my families favorite cornbread, and a way of making it that I haven’t ever seen outside of us, so I thought I would share. Give it a try!
Yield: 8 servings

2 cups self-rising corn meal mix
24oz large curd cottage cheese
2 tbsp granulated sugar
3/4 cup whole milk or buttermilk
1 egg
2 tbsp bacon grease

Yield: 8 servings

  • 2 cups self-rising corn meal mix
  • 24oz large curd cottage cheese
  • 2 tbsp granulated sugar
  • 3/4 cup whole milk or buttermilk
  • 1 egg
  • 2 tbsp bacon grease
  1. preheat oven to 400 F
  2. place cast iron skillet in oven while it is heating
  3. place cornmeal in a large bowl
  4. add cottage cheese, sugar and egg
  5. stir until mixed
  6. add milk slowly until mixture has consistency of lumpy gravy
  7. remove skillet from oven and add bacon grease to skillet
  8. pour cornbread mix into skillet and place in oven
  9. bake 30-35 minutes or until a knife inserted in the center comes out clean.
